Some time in 2006, Madame Lee and Mr. Hur came to London and found themselves in Baker & Spice. They own a baking-centric food empire in Korea. Inspired by Baker & Spice in London, the main trading vehicle in Korea, Paris Croissant, commissioned Foodcraft Solutions to set up queens park in the capital city of Seoul.

The concept included all baking and cooking activities on-site, with food retail and a large restaurant section for an all-day breakfast, lunch and dinner concept, with a brunch menu on the weekends.

During the planning stages, a team of eight arrived from Korea to spend six weeks with Baker & Spice in London, working front and back of house, familiarising themselves with recipes and methodologies.
