In 2005, Yael Mejia designed a new bakery cafe for Bread Ltd called Gail's. She was responsible for the entire concept of the café. This included identifying the first location, designing the premises front and back of house, developing products for retail and menus, charting out the initial marketing strategy and setting in place all-important operational processes that ensured a systematic functioning.

The first site was established in Hampstead, London. To date there are six Gail’s outlets operating successfully around London, with a seventh on the way.
