In 2007, Joel Bernstein, a friend of Baker & Spice in London, convinced Yael Mejia to develop and open an exciting and original chocolate shop that would set a new benchmark in the heart of any chocolate lover. A third friend, Walid Al-Damerjee, turned the duo into a trio. Yael identified a site in Connaught Street W1 and Joel and Walid supervised the transformation of the interiors. Her brief was to develop original recipes for the shop based on exotica and London cool.

Mindful of her ethical convictions, Yael shied away from African couverture, which is tainted with child slavery and chose to work with top quality chocolate manufacturers like Valrhona and Michel Cluizel, who source couverture from Latin America.
